1 egg
1/2 c. sugar
1/4 c. oil
2 bananas, chopped into small pieces, or mashed
1 c. self-rising flour, not sifted
1 tsp. baking powder
3/4 c. chopped pecans

Directions:
Directions:
Mix the first 3 ingredients together. Add bananas. Add flour, baking powder, and nuts. Drop by teaspoon-fulls into mini-muffin pans, or use ice cream scoop and drop into larger muffin pans. Can also pour into loaf pan and make small loaves. Bake in 350 oven. Test by inserting knife into center of muffin. If it comes out clean, they are done.
