5 med. Zucchini
1 lb. Ground Beef
1 sm. Onion, chopped
1 Box Stove Top Stuffing
1 Can Cream of Chicken soup
1 c. Sour Cream
Salt
Pepper
2 c. Cheddar Cheese

Directions:
Directions:
Split zucchini length wise, salt and set on napkins. Brown ground beef with onions. Place in bowl and add stuffing, cream of chicken soup, salt, pepper, and sour cream, stir well. Run a spoon around the inside of zucchini and scoop out the squash. Leave about 1/3 shell of zucchini. Place skin side down in baking dish. Fill zucchini with meat mixture and top with grated cheese. Bake at 350 for 30 minutes or until zucchini is soft.
