2 lbs. ground round or turkey
6 c. water
6 beef bouillon cubes
3 sliced carrots
1 lb. thinly sliced zucchini (can use frozen)
2 med. onions, chpd
2 jars salsa, Pace Mild works well. Use one without cilantro.
1 1/2 tsp basil
1 can stewed tomatoes
2 T. butter
1 tsp. salt
1 tsp. pepper

Directions:
Directions:
Saute meat until browned. In large pot, simmer water, bouillon, carrots, zucchini, and onions until veggies are tender. Add tomatoes, butter salt, pepper, basil and meat. Simmer 15 minutes and then add salsa. Simmer additional 30 minutes - 2 hours. Great served warm with crusty bread or quesadillas!
