2- 19 oz. cans cannellini beans, drained
1/2 lb. Roma tomatoes, diced
1/2 cup fresh basil, chopped into 1/2 inch pieces
1 tsp. coarse salt
Pepper to taste
1/4 cup extra virgin olive oil
3 cloves of garlic, minced

Directions:
Directions:
Mix the first five ingredients in a bowl. Saute garlic in oil until fragrant but not brown ... 2-3 minutes maximum! Mix all together. Let sit at room temp for one hour (may be kept up to 4 hrs. at room temp).
