2 lbs white mushrooms stems removed and finely chopped
1 med onion finely chopped
1 large clove of garlic finely chopped
2 TBS olive oil
1 pkg bread stuffing mixed according to pkg
juice from 1 lemon
2-4 TBS melted butter

Directions:
Directions:
Preheat oven to 400. Wash mushrooms, remove stems and chop them finely. Heat oil and add onions until brown, then garlic and finally the mushroom stems. Add 1/2 of lemon juice and combine with mixed stuffing. Place mushroom caps in a baking dish and fill with stuffing mixture. Drizzle with remaining lemon juice and melted butter. Bake for 10 minutes.

I am not necessarily a mushroom fan but these are so good. I had mushrooms left over one Thanksgiving and had stuffed mushrooms one time so I kind of made up this combination and got lots of compliments. Try it.
