2 cups all purpose flour
1/4 teaspoon salt
1 egg beaten
1/2 cup warm water
1 Tbls melted butter or lard (cooled)
add additional melted butter for brushing dough

APPLE FILLING
3 ponds tart apples,peeled and sliced
1 cup seedless golden raisins, optional
1/2 cups sugar
1/2 cups fine plain dry bread crumbs (more if needed)
Cinnamon

CHEESES FILLING
24oz cottage cheese
3 eggs yolks beaten
3 eggs whites beaten
raisins
1/2 cups sugar
1 teaspoon vanilla

DOUGH:
sift flour salt into a bowl. Add beaten egg and gradually add warm water mixing by hand. After all water is used, add melted butter. Knead dough in bowl for 20 minutes or until dough is smooth, bubbly and elastic and no longer sticks to the bowl or fingers. Place in the center of a large table. Cover with a large cloth that has been floured. Grease top of dough with melted shortenings. Place bowl over top and let rise 20-30 min. After rest period, the dough is ready to sretch.With rolling pin, roll until double in size. brush surface of dough generously with melted butter and let dough rest 10 minutes.
Begin stretching dough with knuckles (curve open fingers to make a claw-like hand) being careful not to use finger tips which will tear dough. Pull and gently stretch dough until it completely covers table 3 to 5 feet and is parchment paper thin. (if dough doesn't stretch, let it rest , then try again). Tear off any ragged ,thick edges of dough. Let dough dry for 5 minutes.

APPLE FILLING:
combine filling ingredients except for cinnamon, Sprinkle apple ingredients over top of dough. Sprinkle with cinnamon and drizzle about 6 T butter over filling as evenly as possible.

CHEESE FILLING:
Beat yolks -mix with cottage cheese . Beat egg whites fold into cottage cheese add sugar and vanilla.

ROLLING STRUDEL:
Pick up edges of dough on long side and let strudel roll into a huge roll. Cut into 4 (15 inches each).
Gently place each in a greased baking pan that has low sides like a jelly roll pan. DO NOT crowd strudel. If necessary use 2 pans. Bake in a preheated oven 375 degree oven 30 minutes or until brown and crisp. while still warm sprinkle with sifted powder sugar on top.
