Dressing:
4 T. vegetable oil
2 T. sugar
2 T. white wine vinegar
1 T. fresh parsley, chopped

Toasted almonds:
2 T. sugar
1 T. butter
2 oz. slivered almonds

Salad:
4 c. mixed greens
3 thinly sliced green onions
1 - 11 oz. can drained mandarin oranges
1 c. sliced strawberries
2 stalks chopped celery (optional)

Directions:
Directions:
Dressing: Whisk oil, 2 T. sugar, vinegar and parsley in medium bowl to blend. Chill until ready to use.

Melt 2 T. sugar and butter over low heat, add almonds; stir until they are lightly browned being careful so they do not burn. Cool on waxed paper and break apart.

Place salad ingredients in a large bowl, add dressing, toss and top with almonds.

About 215 calories
