1 1/2 c. choc. sandwich cookies
1/3 c. butter.
8 oz. cream cheese
1 1/4 c. sugar
1 tsp. vanilla
2 eggs
16 oz. chocolate chips

Directions:
Directions:
Finely crush the cookies until you have 1 1/2 cups of cookie crumbs. Combine finely crushed cookies and butter, and press into the bottom of a 9" springform pan. Combine cheese, 1 cup sugar and vanilla. Mix until well-blended. Stir into the cheese mixture the 2 eggs yolks and the chocolate chips. Beat egg whites until soft peaks form, then gradually beat in 1/4 cup sugar. Fold into chocolate-cheese mixture. Pour over the crumbs. Refrigerate overnight or can be frozen. Decorate as you wish. You may want to use pasteurized eggs.
