1/2 cup fresh lime juice
2 T. hot sauce
3 garlic cloves
6 chicken breasts
1/2 cup golden raisins
1 16 oz. can fat free chicken broth
1 cup long grain rice
2 tsp. chili powder
1 tsp. cumin
3/4 tsp. salt
1/2 tsp. black pepper
1 large onion
1 cup red peppers

Keep warm. Rub spice mix on chicken (1 tablespoon) and then use the remaining spice mix on vegetables. Put vegetables on grill and grill, and then grill chicken separately. Mix first three ingredients and add chicken, turning to coat and then let rest in marinade for at least one hour. Bring raisins and broth to a boil and then add rice; cover, reduce heat. Simmer and cook 20 minutes. Toss rice, vegetables, 2 tablespoons of chopped cashews and 2 tsp. of olive oil. Serve with chicken.
