1 whole egg
1 1/2 c. buttermilk
1 c. flour
3/4 tsp. baking soda
1 tsp. salt
1 T. sugar
1/2 tsp. baking powder
2 T. oil

Directions:
Directions:
1. Beat egg until fluffy. Add buttermilk and mix well.

2. Add dry ingredients. Beat with rotary beater just until smooth. Fold in oil last.

3. Pour onto hot greased griddle. Turn when pancakes are puffed and full of bubbles.

This is a very light pancake so it is excellent when served with strawberries and whipping cream.
