1 T. vegetable oil
1 boneless rib-eye or New York strip steak, about 1 inch thick, room temperature, not a frozen steak
coarse salt and cracked pepper

Directions:
Directions:
Preheat oven to 475. Preheat cast iron frying pan on stove with a little olive oil in the bottom on high heat, until it begins to smoke. Brush both sides of steak with olive oil. Salt and pepper steak on both sides. Sear steak in pan 3-4 minutes; until a dark crust has formed. Then put entire cast iron pan in preheated oven. Bake in hot oven for 5 to 7 minutes or as done as you would like it. Transfer to plate, let sit a few minutes. Slice across grain, serve with steak sauce.
