1 cup white cornmeal
1/3 cup sifted flour
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 small onion, diced
3/4 cup buttermilk

Directions:
Directions:
Mix cornmeal, flour, salt, baking powder and baking soda in a bowl. Stir in onion and buttermilk. Blend thoroughly. Drop batter by heaping teaspoonfuls into hot fat at least 1-inch deep. If needed, add more buttermilk for good consistency. Fry until golden, turn and brown other side. Drain on absorbent paper and serve hot.
