2 pounds head of shredded cabbage
34 tablespoons salt cucumbers, sliced
2 carrots scraped and sliced
2 red onions, thinly sliced
1-1/2 cups white or cider vinegar
1/2 cups apple juice
1/2 cup water
3 tablespoons vegetable oil

Directions:

Combine all ingredients in large non-metallic bow. Cover and marinate in refrigerator for 24 hours or more. Salad will keep several days and taste test after at least 2 days of marinating. (42 calories each serving)
