Ingredients: 2 cups brown sugar 3/4 cup shortening 2 eggs 1 teaspoon baking soda (dissolved in 1/4 cup hot coffee) 2 cups flour 1/2 box raisins (cooked and drained, preserving the liquid) (2 cups) 1 cup chopped nuts 1/2 teaspoon salt
ICING: 1 cup brown sugar 2 tablespoons butter 3 tablespoons shortening 1/4 teaspoon salt 1 teaspoon vanilla or maple flavorings 1/4 cup milk (use evaporated) 1-1/2 cup powdered sugar or less

Directions:Cream shortening and sugar together. Add the eggs one at a time. Stir in baking soda which has been dissolved in the hot coffee. Add the raisins (the cookies are better if you leave a little liquid with the raisins) and nuts. Stir in flour and salt. Spread on a cookie sheet (one with sides) about 1/2 inch thick.
Bake at 350º for about 25 to 30 minutes. Frost with Brown Sugar Icing.
BROWN SUGAR ICING: Combine brown sugar, butter, shortening and salt. Bring to a boil, stirring constantly. Add milk, cook 3 minutes. Cool. When cool, add powdered sugar and 1 teaspoon vanilla or maple flavoring. (If icing is a little too thick for spreading, add a very small amount of milk until you reach desired consistency. Spread on baked cookie bar and cut into squares. |
