3 eggs
1 cup oil
2 cups sugar
2 teaspoon vanilla
2 cups grated zucchini
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon baking powder
1/2 to 1 cup chopped nuts

Directions:

Mix eggs, oil, sugar and vanilla. Sift together the dry ingredients and add with the zucchini. Fold in the nuts. Bake in a greased and floured pan in 325 oven for 1 hour or until center comes clean.
