5 lb red potatoes
3/4 c celery
6 hard boiled eggs
1/2 lb bacon
4 extra large eggs
1/3 c white vinegar
2/3 c water
1 pint Hellman's Mayo

Directions:
Directions:
Boil potatoes with skin on until soft, let cool but still warm, then peel and dice,
Chop celery, Boil 6 eggs, chop
Dressing:
1. Fry slightly more than 1/2 lb of bacon that has been chopped (farmers bacon works the best).
2. Mix 4 extra large eggs in a bowl and beat.
3. In a bowl put 1/3 c white vinegar, add 2/3 c water to equal 1 c, pour in beaten eggs, then pour in bacon including bacon grease. Keep stirring while cooking, let dressing cool a little but while still warm pour into cubed potatoes. Add celery and hard boiled eggs, add a pint of Hellman's Mayo.
