2 c. boneless chicken breast
2 bell peppers
salt and pepper
1/2 c chopped onion
1 medium zucchini - chopped
3/4 c shredded mozzarella cheese
4 tbsp parmesan cheese
2 tbsp light cream cheese
3 cloves of garlic
all purpose herb seasoning

Directions:
Directions:
Boil peppers to prepare for stuffing.
Cook chicken, boil.
Saute garlic, onion, zucchini.
Combine all ingredients (except parmesan cheese) and the sautéed veggies in food processor and process until smooth. Fill peppers and bake at 350 for 30 minutes, top with parmesan cheese and bake at 400 for an additional 10 minutes.
