1/2 cup butter or margarine (softened)
1 cup sugar
2 eggs
1 cup mashed ripe bananas (2 - 2 medium size)
1 Tbsp vegetable oil
2 Tbsp milk
2 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 - 1 cup chopped walnuts or pecans

Pre-heat oven to 350
Grease 9" x 5" x 3" loaf pan.
In mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. In a small bowl, combine mashed bananas, milk, and vegetable oil. Beat into butter/sugar/egg mixture. Combine flour, baking powder, baking soda, and salt; gradually add to creamed mixture and mix well. Stir in nuts.
Pour into greased loaf pan. Bake at 350 for 60 - 65 minutes. Cool for 10 minutes before removing from pan to wire rack.
Servings: 10 - 12 slices
Comments: This is an old recipe my mother had but when I made it, it always turned out dry. So, I did some experimenting and now my family claims it is close in taste to that served at a well known restaurant. (I can only hope.)
