Vinaigrette: 1/4 cup chopped tomato 1/4 cup cilantro 2 tbsp. olive oil 1 tbsp. cider vinegar 1 tbsp. lime juice 1/4 tsp. salt 1/4 tsp. ground cumin 1/4 tsp. chili powder 1/4 tsp. black pepper 1 garlic clove, peeled Salad: 8 cups thinly sliced lettuce 1 1/2 cup cooked chicken 1 cup chopped tomato 1 cup green bell pepper 1 cup diced red onion 1/2 cup shredded sharp cheddar cheese 1 can black beans 4 cups fat free tortilla chips served on the side
Mix vinaigrette ingredients together and serve over assembled salad.
