4 tablespoons butter or margarine
1/3 cup finely chopped onion
3 cups diced, cooked potatoes (sliced, canned potatoes work well too)
1/2 cup chicken broth (or bouillon)
2 teaspoons curry powder
1 teaspoon lemon juice
salt and pepper to taste

Directions:
Directions:
In a large skillet, melt butter, add onion, and cook over low heat until wilted. Do not brown. Add potatoes and cook, stirring frequently, until potatoes have absorbed the butter.

In a small bowl, blend together broth, curry, and lemon juice. Add to potatoes; stir to combine. Continue cooking until liquid is absorbed. Season to taste.
