2 C all-purpose flour
2 tsp. baking powder
2 T confectioner's sugar
1 T vegetable oil
2 C milk
3 eggs, separated
2 tsp. vanilla
pinch of salt
fruit of your choice
whipped cream

Directions:
Directions:
Combine the flour, baking powder, confectioner's sugar, oil, milk, egg yolks. Beat the egg whites until they stand in soft peaks and fold into batter (do not over mix). Using a 4-ounce ladle or a 1 C measuring cup, pour 1/8 of the mixture into a hot waffle iron and bake for about 2 minutes. Repeat with the remaining batter. Top with fruit and whipped cream and serve hot.
