2/3 cup sliced carrot
1/2 cup of diced onion
1 tsp minced garlic
3 cups of beef or veggie broth
1.5 cups of diced green cabbage
1/2 cup of green beans
1 Tbsp. tomato paste
1/2 tsp. dried basil
1/4 tsp. dried oregano
1/4 tsp. salt
1/2 cup of diced zucchini

In large saucepan, sprayed with nonstick cooking spray, saute the carrot, onion, and garlic over low heat until softened, about 5 minutes. Add the broth, cabbage, beans, tomato paste, basil, oregano, and salt, and bring to a boil. Lower heat and simmer till the beans are tender. Stir in zucchini and heat for about 4 minutes. Serve hot and accompany with crackers.
