3 medium sweet potatoes, peeled and cubed
2 1/2 c. milk
1/2 c. heavy cream
1/2 c. sugar
1/2 tsp. ground cardamom

Directions:
Directions:
Bring 1 qt. water to a boil in a saucepan. Add sweet potatoes, reduce heat to medium, and cook, uncovered, until tender, about 25 to 30 minutes. Drain potatoes and return to saucepan. Stir in milk, cream, sugar, and cardamom. Heat slowly to boiling over medium-low heat, stirring frequently with a wooden spoon. Reduce heat to low and simmer, uncovered, for 45 minutes or until the potatoes are reduced to a puree and the mixture is thick enough to hold its shape. Let cool, then beat with a hand mixer until smooth. Serve at room temperature or refrigerate before serving.
