1 T. olive oil
1 cup chopped onion
2 lbs chicken breast, cut in small pieces
2 packets taco seasoning mix
2 13.75 oz. cans artichoke hearts, drained and cut into quarters
2 28 oz. cans dices tomatoes
1 28 oz. can crushed tomatoes
2 14 oz. can white kidney beans, drained and rinsed
1 14 oz. can garbanzo beans (chick peas), drained and rinsed
2 T. fresh cilantro (this really gives it the right flavor)

Directions:
Directions:
Saute the chicken in the olive oil until cooked
Combine all ingredients in a crock pot.
Cook on high for 4 hours or low for 6-8 hours.
