2 tbsps. butter or margarine
1 cup chopped celery
2 cans cream of mushroom soup
1/2 cup chopped onion
2/3 cup chicken broth
2 cups cooked rice
4 cups diced cooked chicken
4 tbsps. soy sauce
1 cup chow mein noodles
1 cup cashew nuts

Directions:
Directions:
Preheat oven to 375°. In a large pan sauté celery and onions in butter until tender. Stir in soup and broth. Simmer 5 minutes. Add chicken and soy sauce. Cook over low heat for 5 minutes. Stir in rice. Spoon into a “9x13” baking dish. Bake until liquid bubbles to surface -- about 30 minutes. Sprinkle noodles and nuts on top and brown in oven. (can double noodles or delete cashews
