3 zucchini, chopped
1 1/4 cups eggplant, chopped
1 yellow squash, chopped
1 cup water or low sodium chicken broth
1 can diced tomatoes with chili
1 can no salt added whole tomatoes, undrained and chopped
2 jars slice mushrooms, drained
1 garlic clove minced
1/2 teaspoon Italian seasoning
1/4 teaspoon salt
1/8 teaspoon pepper

Directions:

Combine all ingredients in a large saucepan, stirring well. Boil Cover reduce heat and simmer 25 minutes or until vegetables are tender. Sprinkle with Parmesan cheese if desired
