1 lb fresh baby carrots
1/3 c butter or margarine
3/4 c egg beaters with yolk egg substitute
1/2 c sugar
3 T flour
1 tsp baking powder
1 tsp vanilla

Directions:
Directions:
Preheat oven to 350 degrees. Place carrots in microwavable container with butter. Cover. Microwave on high 7-8 minutes or until tender. Put carrots in blender with remaining ingredients. Process 20-30 seconds until well blended. Transfer to 2 quart baking dish (sprayed with PAM). Bake, uncovered, 30-40 minutes or until firm and inserted toothpick comes out clean.
