1 large chicken
1/3 cup oil
1/2 cup flour
1 cup onion chopped
1/2 cup green pepper chopped
1/2 cup green onion chopped
2 cloves garlic crushed
1/4 cup parsley chopped
1 1/2 lb Andouille Sausage
2 tbsp kitchen bouquet
file powder
3 quarts water
salt to taste
4 cups steamed rice

Directions:
Directions:
In a large heavy pot heat oil and add flour. stir constantly until roux is a medium brown. Cut chicken into pieces, cut andouille sausage into pieces. add to roux. stir and simmer for 15 minutes.

Add onions, green pepper and green onions, garlic ,
amd simmer for 20 minutes. Add water, stir and let boil for 1 hour on medium heat. if it doesn't seem to
be a nice brown color add 2 tbsp of Kitchen Bouquet. A pinch of File. Serve over rice
