1 c. graham cracker crumbs
1/4 c. melted buter or margarine
1 can (14 fl. oz.) sweetened condensed milk
1/3 c. lemon juice
1/2 tsp. grated lemon rind
5-1/4 C. (12 oz.) Cool Whip Whipped Topping
(thawed)
2-2/3 c. (7 oz.) flaked coconut
Mint leaves for garnish

Directions:

Combine graham cracker crumbs and melted butter. Press firmly into bottom of 9 inch square pan.
Combine milk, lemon juice and rind, in large bowl. Fold in 3-1/2 cups of the whipped topping and 1-1/2 cups of the coconut. Spread mixture over crumbs.
Sprinkle with remaining coconut. Chill at least 2 hours. Cut into squares. Top with remaining whipped topping and garnish with lemon slices and mint leaves if desired.
