1 cup blueberries
1/2 cup (1 stick) butter at room temperature
2 large eggs at room temperature
1 cup sugar
1 1/2 tsp. baking powder
1/4 tsp. salt
2 cups all-purpose flour
1/2 cup milk
1 tsp. lemon extract

Directions:
Directions:
Preheat oven to 375. Cream butter, eggs and sugar until light and fluffy (about 4 minutes on high speed). In separate bowl, combine baking powder, salt and flour. Add flour mixture and milk alternately to batter, beating at low speed. Beat until batter is just smooth, then add lemon extract. Gently fold in blueberries. Fill muffin cups/pans about 2/3 full. Bake at 375 for 15-20 minutes.
