Ingredients:
6 medium baking potatoes
3 T. of butter
3/4 c. of milk
1/2 c. of sour cream
1 small onion
1 T. of dried basil
Salt and pepper to taste
Dash of garlic
1/2 c. of grated cheddar cheese

Directions:
Directions:
Wash, dry, pierce, and bake the potatoes in a 400 degree oven for 45-60 minutes until potatoes are done. Finely chop the onion and place it in a small bowl with the milk (this will flavor the milk and add to the taste). When cool enough to handle, use a spoon to scoop the potato out of the shells. Place the potato in a bowl and add all ingredients. Use a potato masher or mixer to combine. Add extra milk if too dry. Spoon the mixture back into the potato shells and sprinkle each with cheese. Place back in oven until cheese melts and potatoes are warm.

My two grown children still ask for this side dish. I have used fresh and dried chives instead of the basil.
