1 c. sugar
2 eggs
3/4 c. vegetable oil
1 1/2 c. grated carrots
1 t. soda
1/2 t. salt
1 1/2 c. flour
1/2 t. cinnamon
1/2 c. chopped nuts

Directions:
Directions:
Preheat oven to 350. Mix together sugar, eggs, and oil until well blended. Then mix in carrots, soda, salt, flour, cinnamon, and nuts until well blended. Pour into 2 cake pans and bake until a toothpick inserted into the center of the cakes comes out clean. Let cool for 10 minutes in the pans and then invert onto a cake plate and cool until room temperature. Then frost with cream cheese icing.
