2 tbsp butter
1 tsp chopped onion
Sprig parsley
1 1/2 c blue crab meat
2 tbsp flour
2 c chicken broth
2 c half & half (room temperature)
Salt
Cayenne pepper

Directions:
Directions:
In a large saucepan, melt butter, add onions and parsley and cook slowly until onion is yellow. Add crab meat. Cook and stir 5 min. Stir in flour. Add chicken broth. Bring to a boil. Reduce heat and simmer, covered, for 20 min.
Remove the parsley. Add half & half. Heat, but not to a boil.
Season with salt and cayenne pepper. Add additional butter if desired.
