2 qts.. (4 C.) canned diced tomatoes (do not drain)
Olive oil
6-8 cloves of garlic, minced
1 large onion, chopped
2 small cans of tomato paste
1 T. oregano
1 T. sweet basil
4 T. sugar
2 t. salt
1 t. fresh ground black pepper

Directions:
Directions:
In a medium sized heavy saucepan, sauté the onions and garlic in olive oil over medium-low heat until transparent and soft. Add the tomatoes and juice, oregano, basil, salt, pepper, sugar, and tomato paste. Mix well and adjust seasonings to taste. Bring to a simmer, and reduce heat to a slow bubble. Cook for at least an hour until thickened and cooked through.

Use as a universal sauce for pizza, dipping sauce for bread sticks, topping for scrambled eggs, etc.

May be frozen in an airtight container for up to 6 months.
