1/4 cup butter or margarine
1 qt. sliced peeled potatoes
1 lg. onion, halved and sliced lengthwise
Salt & Pepper to taste
5 eggs, slightly beaten
1 T. chopped parsley

Directions:
Directions:
Melt butter in skillet and add potatoes and onion. Lift and turn potatoes and onion with wide spatula to coat with butter. Saute, turning, a few minutes. Season with salt and pepper, cover and continue coooking, turning several times, until potatoes are browned and tender. Pour eggs over top and sprinkle with parsley. Cover and cook over low heat 5-10 minutes, or until eggs are set.
