1 1/2 c Wesson oil
1 lb dark brown sugar
3 c freshly grated carrots (about 7)
1 c walnuts, coarsely chopped
1 c raisins
2 c all-purpose flour
2 tsp baking soda
1 1/2 tsp cinnamon
1 1/2 tsp ground allspice
1/2 tsp salt
1 tsp vanilla
4 large eggs

Cream Cheese Frosting:
1 cube of unsalted butter, (1/2 cup) soften
1 - 8 oz package Philadelphia cream cheese, soften
2 tsp vanilla
2 c powdered sugar

Cake:
Preheat oven to 350. Oil an 11 x 9 inch sheet cake pan. In a large bowl, combine the oil, dark brown sugar, carrots, walnuts, raisins, flour, baking powder, cinnamon, allspice, and salt and stir to combine. Lightly whip eggs, and add to the dry mixture and mix well. Pour the batter into the prepared pan. Bake until the cake is springy to touch, about 45 minutes. Cool in pan on a wire rack.

Cream Cheese Frosting:
In a medium bowl, combine all ingredients and mix until well blended. Spread on cooled cake.
