4 (6oz.) catfish fillets 1/3 cup yellow cornmeal 1 tbsp. paprika Vegetable cooking spray salt and pepper
Sprinkle catfish evenly with desired amount of salt and pepper. Stir together 1/3 cup cornmeal and paprika in shallow dish. Dredge fillets in mixture; coat on each side lightly with veg. spray. Cook in hot skillet over med. heat 3-4 minutes on each side or until fish begins to flake and is opaque throughout.
