2 c. dried split peas (yellow are best)
2 qt. water (8 cups)
1 hambone (or 1 lb ham hocks/shanks)
2 potatoes
1 c. minced onion
1 c. minced celery
1 sprig parsley
2 tsp. salt
1/2 tsp. pepper

Optional: tomatoes, carrots

Directions:
Directions:
In large kettle heat peas and water to boiling. Boil gently for 2 minutes. Remove from heat and let stand one hour. Add remaining ingredients. Heat to boiling, cover and simmer 2 1/2 to 3 hours or until peas are soft and mushy. Remove bone, trim meat and return to soup.
