2 eggs
1 3/4 cups flour
1 3/4 cups milk
1 tsp baking powder
1/2 cup oil
1 tsp. vanilla

Directions:
Directions:
Seperate egg whites into a small mixing bowl and set aside. With mixer, beat egg whites until stiff and set aside. In a large mixing bowl put egg yokes, flour, milk, baking powder. With mixer, beat egg whites until stiff and set aside. Mix large bowl ingredients until smooth and add vanilla. Hand fold in egg whites. Spray waffle iron with Pam and heat iron until spray is smoking. Add mixture and cook until golden brown. Makes about 6-8 waffles. You can substitutute the vanilla with almond extract or orange extract, either can surprise the taster.
