Unsweetened Chocolate 4 squares Flour 3 c Baking Powder 1 1/2 tsp. Baking Soda 1 tsp. Salt 1 tsp. Eggs 4 White Sugar 3 c Vegetable Oil 1 1/2 c (any kind) Zucchini 3 c - grated Nuts 1 c finely chopped
Melt chocolate over hot water ( or 2 minutes in microwave on high). Grease 9x13 pan or loaf pan. Can also use a bundt pan. Mix oil and sugar together, add eggs and beat two minutes. Beat in the grated zucchini and then add the dry ingredients. Blend in melted chocolate and mix thoroughly. Add chopped nuts last. Bake at 350º for an hour and 15 minutes or until a toothpick comes out clean. If using a loaf pan, let cool for 10 minutes before removing from pan. Will make 2 loaves. If desired, ice with chocolate glaze.
