Marvelous Italian Meatloaf Recipe

1 egg, well beaten
1/2c cracker crumbs
1/2c minced onion
1/2 tsp oregano
1 tsp salt
1/8 tsp pepper
1 8oz can tomato sauce, divided
2c shredded mozzarella cheese
1 1/2 lbs lean ground beef

Directions:
Directions:
Mix first six ingredients and 1/3c of the tomato sauce in a small bowl. Put ground beef into medium sized mixing bowl, then fold in the tomato mixture throughout. Pat out beef mixture onto wax paper into a big rectangle. Sprinkle the cheese over the top, then roll up carefully, using the wax paper. Carefully roll into a greased loaf pan. Tuck ends of loaf gently into the corners of the pan and pull together any cracks at the top. Bake for 1 hour at 350. Top with remaining 2/3c tomato sauce, and put back into the oven for 15 minutes. Let sit a few minutes before cutting into slices.
