One English Cucumber
One Red Pepper
One tomato
Fresh mint or parsley
Splash of olive oil
Splash of vinegar (wine or balsamic)
1 Tbsp. honey
salt and pepper
Small can chickpeas (optional)
Feta cheese (optional)

Directions:
Directions:
Finely chop all ingredients. Add dressing and optional
ingredients. Holds for a few days in the refrigerator.
