11/2 cups warm water (110-115)
1 pkg active dry yeast
2/3 cup sugar
11/2 t salt
2/3 cup soft shortening
1 cup lukewarm mashed potatoes (can use instant)
7-71/2 cups flour

Directions:
Directions:
In cereal bowl put yeast, 1/2 cup water, 2 t sugar and put plate on top while you mix the rest. Let the yeast work.
While yeast is working, in a large bowl stir in sugar, salt, shortening, eggs and potatoes, then add yeast mixture. Mix flour until dough is easy to handle. Turn onto lightly floured board, knead until smooth and elastic. Place greased side up in a greased bowl. cover with a damp cloth and place in refrigerator for at least 2 hours. Can be overnight. About 2 hours before baking, shape dough into rolls, cover and let rise until double in size. 11/2-2 hours. Bake 400 12-15 minutes
