2 pkg. active dry yeast
3/4 c. warm water
1/4 c. sugar
1 T. salt
3 T. shortening
9-10 c. flour
Butter or margarine
Butter-flavored cooking spray

Directions:
Directions:
Dissolve yeast in 3/4 cup warm water. Stir in remaining water, sugar, salt, shortening, and 5 cups of flour. With an electric mixer, beat until smooth. Add enough of the remaining flour to make the dough easy to handle. Turn onto floured surface and knead for approximately 5 minutes until the dough is thoroughly mixed and elastic. Spray a bowl with cooking spray and place the dough in it. Lightly spray the dough and cover with a kitchen towel. Set in an area that is not drafty and let rise about 1 hour or until dough is doubled. To test for proper rising, gently push one or two fingers into the dough about 1/2 inch down. If the imprint of your finger(s) remains, then the dough is ready to be punched down. Punch dough down and divide in half. Shape each half and put into loaf pans coated with cooking spray. Let bread rise a second time. Preheat the oven to 425 degrees. Bake loaves about 30-35 minutes until crust is golden brown. Remove from oven and brush with softened butter or margarine.

Instead of loaves, the dough can be shaped into dinner rolls or even made into cinnamon rolls.
