2 eggs (separated)
2 c. buttermilk
2 c. flour
2 t. baking powder
1 t. soda
1 t. salt
1/2 c. melted butter

Directions:
Directions:
Separate eggs; add yolks to the buttermilk and whisk. Mix flour with other dry ingredients and then blend with egg/milk mixture; while mixing add melted butter. Beat egg whites and fold into batter.

This recipe is from my friend's cousin, who was a chef in the 80's. The kids love this and I do too. If you don't have buttermilk, make sour milk with 1 cup of milk and 1 T. of vinegar.
