French Onion Soup Recipe

5 medium onions (white)
3 T. butter
1-1/2 quarts of beef broth
1/2 tsp. salt
1/8 tsp. pepper
Cheese Croutons:
6 slices of French bread
2 Tbs. butter
1/4 c. grated Swiss cheese

Directions:
Directions:
Saute onions in butter. Cook slowly, approx. 10 minutes. Blend in beef broth, salt & pepper. Bring to a boil; cover & simmer 15 minutes. Cheese croutons: Spread butter on French bread, sprinkle cheese over bread. Place under broiler until cheese melts. Float a crouton in each bowl.

I got this recipe from my long-time neighbor, Tammy Grube, from Red Wing. Sydney and her son, Jackson were born two weeks apart. They grew up together until we moved when Sydney was in 3rd grade.
