1/2 c. whole wheat flour
1/2 c. unbleached white flour
1/2 tsp. baking soda
1/4 tsp. salt
2 Tbs. butter (melted)
1 egg
1 c. buttermilk
2 Tbs. maple syrup
oil to cover frying pan or skillet

Directions:

Mix dry ingredients in medium bowl. Mix melted butter (cooled), egg, buttermilk and 2 Tbs. maple syrup in a small bowl. Whisk egg mixture into dry ingredients until there are almost no lumps. Heat oil in pan. Add 1/4 cup batter to pan, once the top bubbles if underside is brown, flip. Cook about 1 minute. Serve w/ maple syrup.

Our family calls these Riley's pancakes because they came from a book he won in the first grade called, Little House on the Prairie Recipes. Riley has put the dry ingredients in jars & enclosed the recipe as a teacher gift.
