4-5 whole boneless chicken breast, cooked and cooled
SAUCE;
Blend in double boiler:
2 cups medium white sauce
1/4 teaspoon nutmeg
1/2 cup mayonnaise
1/2 cup whipping cream (not whipped)
3 tablespoons Sherry
1 teaspoon Worchester sauce
4-6 stalks of broccoli- partially cooked or may use asparagus

PREHEAT OVEN: 350F
1. Place layer of partially cooked broccoli or asparagus
into a buttered, shallow casserole.
2. Place cooked chicken breast on top
3. Cover with sauce and sprinkle Parmesan cheese and Pepperidge Farm Dressing on top.
4. Bake until brown and bubbly about 20 minutes
*VERY GOOD. great for company
WHITE SAUCE OR ROUX:
2-3 tablespoons all-purpose
4 tablespoons butter (1/2 stick)
1 pint cream
Place butter in small sauce pan and melt over medium
heat, add flour and mix (this is called making a roux) until
there are no lumps, slowly add cream and cook until
thicken. Add 1/4 tsp nutmeg.

This recipe was given to me by a good friend who lived in Sylvan Ridge and our children car pooled together. Her name Was Gail Brown. She passed away long ago with breast cancer, but I still think of her often especially when I see her son, Todd Brown and his family who attend Grace Community Church. I have always loved making this recipe.
