Crust:
1/3 c. butter
1/3 c. brown sugar
1 c. flour
1/2 c. finely chopped nuts

Filling:
1/4 c. sugar
8 oz. cream cheese, softened
1 egg
2 T. milk
1 T. lemon juice
1/2 tsp. vanilla

Directions:
Directions:
To prepare crust, cream butter and sugar. Add flour and nuts. Mix until crumbly. Reserve 1 c. of the crust mixture and set aside. Press remaining mixture into the bottom of an 8x8 pan. Bake at 350 degrees for 12 to 15 minutes. To prepare filling, blend sugar and cream cheese until smooth. Add the egg, milk, lemon juice and vanilla. Beat until smooth. Spread over crust. Sprinkle with reserved 1 c. crust mixture. Return to oven and bake an additional 25 minutes. Let cool. Refrigerate bars before serving. Cut into small squares.

To make a 9x13 pan size batch, double the amount of crust ingredients and triple the amount of filling ingredients. Cheesecake bars are delicious plain or drizzled with raspberry sauce.
