1 lb. rice, cooked (par-boiled or minute rice as directed)
1 c. sugar
1 T. vanilla
Rind of lemon, little bit
10 eggs
1 qt. milk, scalded
Raisins
2 glass Pyrex dishes, greased

Directions:
Directions:
Preheat oven to 325F.
1. Add sugar, vanilla, rind of lemon, eggs, scalded milk and raisins to bowl and mix together. Then add rice and mix again.
2. Pour or ladle half the mixture into each greased Pyrex dish.
3. Sprinkle top with cinnamon and nutmeg.
4. Bake at 325F for approximately 1 hour or until knife in middle comes out clean.

I usually double this recipe when making it. Yummy! Reminder: when pouring mixture into Pyrex dishes, use a ladle to evenly distribute the liquid, raisins and rice.
